Mikey's Diabetic Friendly Recipes that his Awesome Wife Created
All the ingredients below can be found at your local Walmart food store.
Whipped Cream.
Note, this is a very good recipe for no sugar and no carbs, but it is very very fattening!
1 Cup Heavy Whipping Cream
1/2 cup splenda
1 teaspoon Vanilla.
Put
it in the mixer and whip until it turns fluffy. You need to then stop
or if you keep going, you make vanilla flavored sweet butter.
Sugar Free Brownies:
This Recipe is still being developed, but is very close....
4 Squares unsweetened Bakers Chocolate (1 oz squares)
1/4 cup Olive Oil
1/2 cup Smart Balance butter spread
Place
all of the above ingredients into a microwave safe bowl and microwave
(1100 watts) for 1 minute. Stir the mixture. If mixture is not
melted, microwave an additional 30 seconds. This should melt the
mixture. If not, please continue until mixture is melted.
Stir in the remaining ingredients below :
1 Cup Splenda
2 Tbsp Liquid Sweetener (1 tbsp = 1/2 cup sugar)
3 eggs
1/2 cup Whole Wheat Flour
1/4 Cup Flax Seed
1/4 Cup Soy Flour
1/2 Cup Unsweetened Apple Sauce
Grease and Flour (Smart Balance and Wheat Flour) 13x9x2 inch non-stick baking pan
Bake at 350 degrees for 20-25 minutes until fork comes out clean
Whole Wheat/Soy Muffins
1/2 Cup Soy Flour
1 Cup Whole Wheat Flour
2 Tsp Baking Powder
1/2 Cup Splenda
1/8 Cup Flax Seed Flour
1/2 Tsp Salt
1/8 Cup of Olive Oil
1 Cup Milk
1 Egg
1/2 Tsp Lemon Juice
Mix
all dry ingredients then mix in all other ingredients. Mix well and
place in large miffin tins. Will make 6 large muffins. Bake at 400 deg
for 15-18 minutes. Bake until it will not stick to the fork when
testing.
You can add 1/2 cup of fruit but you will need to add an additional 5 minutes to the cooking time.
Artichoke Baked Chicken
Frozen Boneless Chicken Breasts
Salt and Pepper
Garlic Powder
Italian Seasoning
Turkey Bacon
Mario Artichoke Antipasto Paste
Shredded Sharp Cheddar Cheese
Line a 13x9x2 inch pan with Aluminum Foil (This lets you clean-up easily)
For however many frozen chicken breasts perform the following (do not thaw):
Sprinkle Chicken Breasts with salt and pepper
Spread 1 Tablespoon of Artichoke Antipasto on top of Frozen Chicken Breast
Wrap the Chicken breast with 2 pieces of Turkey Bacon (uncooked)
place in pan
Sprinkle with Garlic Powder, Italian Seasoning
Cover top of breast with shredded Sharp Cheddar Cheese
Cover the Pan with Aluminum foil. Make sure you do not touch the cheese topping with the foil.
Bake at 400 Degrees for 40-50 minutes until the chicken reaches 180 degrees F.
Uncover chicken until the cheese slightly browns.
Enjoy.
